My Recipes Issue #1

I love to cook and in fact it is one of my many hobbies. I enjoy creating something new, perfecting something old or as I like to say, “doctoring something up” to make it better.

Food in my opinion is a very ancient way for many great things. Such as the following:

  1. Comfort for the grieving.
  2. Generosity for a favor.
  3. To bring a family together.
  4. Celebrations.
  5. Healing for the body.
  6. Maintaining good health.
  7. Peace offering.
  8. Welcoming gift.
  9. Parting gift.
  10. Zen or just to heal your soul.

I want to share one of my recipes that has been a favorite for me. It brings back memories of a time when I was younger, less stressed, more simple. I didn’t know the things I know now and reminds me that life can still be simple if we choose it. The world gets more chaotic every day but somehow I can still find peace in the simple life. Food being one of them. I hope if you make it, you enjoy it. I also hope it brings a comfort to your body and soul.

Chicken pot pie

Ingredients

2 – lbs of cooked chicken

2 – 15 oz cans of mixed veggies

1/2 cup of chicken broth

1 – 11 oz can of cream of chicken soup

1 – 11 oz can of cream of mushroom

Salt and pepper

Start by boiling your chicken. I use 1 breast and 2 thighs. Skinless, boneless. When it begins boiling, I usually boil for about 20 to 30 minutes or until no longer pink. Drain and then dice up the chicken.

Preheat oven to 350. Put the chicken in a 9×13 pan. Salt and pepper the chicken. Drain your canned veggies and pour over chicken. Spread out the cream of mushroom and cream of chicken over the veggies and then evenly pour your broth over it. Then make your biscuit topping.

Biscuit topping

2 – cups self rising flour

1 – cup milk

1 – stick butter

In a medium mixing bowl, pour your flour in the bowl. Take your cold stick of butter and you can grade or shred it over the flour. I shred it. It’s just a little easier and does perfectly fine. Then add your milk. Here is the fun part. Lol! Mix with your hands! Trust me. My granny’s knew what they were doing. It just mixes much better. Mix until you don’t see the flour anymore. It will be thick. Then take a handful, form a ball and pat out to about 1/2″ thick and place on top. You will make 6 to 8 biscuits out of the mixture.

Place in the oven and cook for 35 minutes or until biscuit topping is starting to turn brown. Then low broil until biscuits are golden brown which can be anywhere from 3 to 5 minutes depending on the oven.

Voila! Southern dish! Food for the soul! Enjoy!

    I love cookbooks. I think more for the stories than the actual recipes. Put “write a cookbook” on your things to do. 🥰🥰🥰
